Lollipop Lamb Chop & Leafy Greens

Sometimes we like finger food at my house! I love this meal because it is protein packed and super fun to eat! There is a local butcher I like to get my lamb from but today I didn't have as much time as I had hoped. The lamb I purchased was imported from New Zealand from a local Italian grocer. I also purchased some shrimp and had some shrimp appetizer today just because it was the last day of the year and I was also trying to find ways to get extra protein into our diet! This is a quick and easy meal! You can even find the lamb pre-seasoned many places! Be aware not to cook olive oil at a high heat! I find the chops to have plenty of fat for the pan or for the oven. You can use grass fed butter or ghee for the pan or as a vehicle for the rub if needed!

Ingredients:

  • 9 - 12 Lollipop lamb chops

  • Ghee or Grass fed Butter

  • 3 cloves of chopped garlic

  • 1 tablespoon of fresh oregano finely chopped

  • 1 tablespoon of fresh parsley finely chopped

  • 1 tablespoon of fresh rosemary finely chopped

  • 1 Tablespoon of Flaky Sea Salt

  • 1 Teaspoon of Pepper

  • 3 cups of chopped organic Leafy greens

  • 8 sliced cherry tomatoes

  • 1/2 chopped cucumber

  • 1/4 cup feta cheese

  • 1/4 cup diced red onion

  • olive oil and vinegar dressing

  • full fat organic greek yogurt

Instructions:

  1. Heat a non-stick grill or cast iron pan on the stove at a medium to high heat. You can throw a tablespoon of grass fed butter or ghee into the pan but this time I chose not to and it worked out just fine! In a bowl, place the chops in with the garlic, 1/2 the oregano, 1/2 parsley, and all of the rosemary. Top with the salt and pepper. Then place them in the pan. They will cook fast but typically you can let them sit 2-3 minutes each side for a medium cook. They should get a slight char and then you can take them out to rest. Sprinkle with the remainder of the parsley and oregano.

  2. Prepare your salad by chopping your greens, cucumber, onion, and tomato. top with feta as well as olive oil and vinegar. Scoop some of the greek yogurt into a bowl (I like to season with dill).

  3. Enjoy so many different ways! You can dip the chop in the yogurt or use as a vehicle for your salad! This dinner is super helpful and amazing! Feel free to add more salt and pepper to taste!

  4. If you are looking to add one more element you plan to make or buy a loaf of sourdough bread! So Yummy! Enjoy!
