Simple, Light, & Quick Protein Filled Meal | Hard Boiled Eggs & Pickled Beets!
If any of you have some left over boiled eggs from Easter this will be the perfect fast breakfast to have to start the week! You can add as much protein as you want and are also getting the benefit the incredible nutrients a beet has to offer! Don’t do what Brian and I did, we were so memorized by the beautiful dyed eggs we left them on the counter! Needless to say we didn’t have any left over boiled eggs!!!!!!
Ingredients:
4-5 local farm eggs
5 organic pickled beets in organic white vinegar (love beets are my favorite brand)
optional salt/pepper
Instructions:
Place eggs in a pan full of water and bring to a boil. Boil eggs for 20 minutes. Then drain the water and replace it with very cold water. Let the eggs sit for 5 minutes. Then peel.
Carefully slice the eggs and arrange them in a bowl.
Carefully slice 5 pickled beets and arrange with the eggs in the bowl.
Add salt, pepper, or your favorite herb if you like (personally I do not add anything:).
