Southwestern Style Chili

I’ve been loving this warm and healthy winter recipe! I think the southwestern style really does it for me! I’m not typically a chili fan but to be honest I’ve loved this and especially love all of the toppings! My favorite toppings include: greek yogurt, avocado, cilantro and cheddar cheese! You can pick whichever ones you think go best! But, if you are like me and the weather continues to be cold and dreary, this will brighten your day! Enjoy it with family and friends or just warm up some left overs on your own!!!! You can use any ground meat but I’m in love with the ground turkey I’m getting from sprouts! I can’t wait to hear how it goes!

Yields: 6-8 servings

Prep: 15-20 min

Cook time: You can do stovetop but I’m loving this as a slow cooker recipe 4 hr on high or -6 hours on low cook time

Ingredients:

  • 1 Tbsp. avocado oil

  • 1 yellow onion chopped

  • 1 bell pepper chopped

  • 2 lb ground turkey

  • 4 garlic cloves chopped

  • 1/4 cup tomato paste

  • 2 cans of diced tomatoes, you can try fire roasted they give a nice and new taste!

  • 1 15 oz can of black beans rinsed

  • 1 15 oz can of kidney beans rinsed

  • 1 cup of chicken broth

  • 1 can of green chilies

  • 1 packet of your favorite chili seasoning or 1 tsp. chili powder, 1 tsp. dried oregano, 1/2 tsp salt, and 1/2 tsp black pepper

  • Shredded cheese (pepper jack, Monterey Jack or cheddar are best) diced avocado, greek yogurt, cilantro are amazing!

Instructions:

  • Heat the oil in a skillet over medium-high. Add the onion and bell pepper and cook until tender. Then add the turkey and cook through. Add the garlic and tomato paste.

  • Transfer the turkey mixture to the slow cooker. ix in the tomatoes, black beans, kidney beans, chicken broth, chillies and spices. Cover and cook on high for 4 hr or on low for 6 hours.

  • Reduce the heat and serve with cheese, avocado, cilantro or greek yogurt !

  • Enjoy!
