Arugula, Dried Fig, Walnut, and Goat Cheese Salad

I am so excited to share this salad with you! I used to not like sweet salads, but this one is the perfect mix of sweet, tangy and crunchy, and the arugula brings a light, peppery flavor that is absolutely incredible.

Feel free to omit the beets or anything else you don’t enjoy. If you don’t want a sweet dressing, you can always pick up a fig balsamic dressing, which is also incredible. My favorite way to eat this salad is to pair it with a pepperoni and onion brick oven pizza topped with red pepper flakes!

Ingredients:

2 cups arugula

1/2 cup dried figs, halved

1/4 cup walnuts, chopped

1/4 cup goat cheese crumbles

1 beet pickled in white wine vinegar, thinly sliced

balsamic glaze or fig balsamic glaze, to taste

Instructions:

  1. Gather the arugula and place in a bowl.

  2. Add the walnuts, goat cheese, beets and figs.

  3. Drizzle with the balsamic glaze, and enjoy!
