Two Farm Eggs Over Easy with Arugula and Beets

If you are wanting a little tang with your breakfast, then this is a perfect option. This recipe is healthy and full of nutrients. Use the sourdough bread to soak up the yoke, or omit for a low carb option.

Ingredients:

1 slice sourdough bread (optional)

2 farm fresh eggs

1/2 cup arugula

2 beets pickled in white balsamic/wine vinegar, sliced

1 tsp Everything-but-the-Bagel seasoning

Instructions:

  1. Crack the eggs into a non-stick or cast iron pan, and cook over easy.

  2. Place the cooked eggs on your bread or in a bowl, and add the arugula and sliced beets.

  3. Sprinkle eggs with seasoning, and enjoy!
