Broccoli & Chicken Pesto

I love simple summer salad type foods that are easy to put together and taste amazing hot or cold! This simple recipe is no exception! I absolutely love pesto! You can make your own or buy it at the store! I am trying to get more liver loving foods in my diet so broccoli or cauliflower is a great choice here! You can totally substitute Brussel sprouts as well ! As you may already know getting 25-30 grams of protein is so important for maintaining healthy skeletal muscle, helps you not overeat and of course helps support brain health! You can flavor your chicken and grill it as you like! I kept things super quick simple with this recipe and am going with a boil! Here we go!

Ingredients:

-Your favorite pesto! See my homemade recipe if you like!

-2 cups of small broccoli

-2 chicken breasts

-grated parmesan cheese

Instructions:

  1. Steam the broccoli, or in a pinch you can microwave a frozen bag. Blot dry.

2. Boil the chicken and then chop into bite size pieces

3. Combine the broccoli and chicken. Add the pesto to taste! Sprinkle the parmesan cheese.

4. enjoy!
