Hearty Chicken Soup
It’s been so cold in MD lately, I made a crockpot of soup this past week! I’m so thankful I did!!!!!! It’s a super healthy recipe and tastes amazing! I was able to make bone broth from the chicken I roasted Sunday and used it for broth! It felt very wholesome and made me so happy I wanted to share with you! Hearty Chicken Soup Ingredients:
-2 tablespoons of olive oil
-2 tablespoons of butter (optional)
-8 cups of chicken broth
-1/3 cup sherry cooking wine
-1 onion diced
-6 carrots sliced
-2-3 ribs of celery chopped
-4 cloves of garlic chopped
-4 leaves of sage chopped
-8 sprigs of Thyme cleaned and chopped
-1/4 cup parsley chopped
-1 parmesan cheese rind
-1/2 cup shaved parmesan
-1 lb of boneless chicken breasts, thighs or left over chicken
-2-3 cups of egg noodles
Instructions:
Step 1: In a dutch oven or large sauce pan heat the olive oil and butter on medium heat. Add the onions and then cook for 3-5 minutes. Add the garlic, celery, carrots, thyme, and sage. Season with salt and pepper. Cook for another 5 minutes. Pour in the sherry and broth then bring to a boil. Then turn down the heat.
Step 2: Place the contents in a crockpot. Add the chicken parmesan rind and the juice of one lemon. Season with salt and pepper. Shred the chicken if it is not already shredded. When you are ready to eat it add the egg noodles and let them soak for 10-15 minutes.
Step 3: Serve with shaved parmesan and parsley!
