Kale Chopped Salad

I’m excited to share this Thursday night dinner with you! This is a go to for our family when there has been some heavier meals nights prior but I still want to have something available that has a good amount of protein but feels lighter. Last week I picked up some local bacon, eggs, and cheese from the local farmers market. I hope you enjoy this healthy and satisfying meal!

Ingredients:

  • Kale

  • Cherry tomatoes

  • Cucumber

  • Pepper (red, yellow or orange)

  • Swiss cheese

  • Avocado

  • Carrots

  • Crispy bacon (buy local!)

  • 3 boiled eggs (buy local!)

  • Honey mustard dressing or your favorite dressing for a chopped salad

Instructions:

  1. Chop Kale, cherry tomatoes, peppers, carrots Swiss cheese, avocado, eggs, and bacon.

  2. Add the Kale and then add each ingredient as a layer on your salad:). If they don’t all fit no worries!

  3. Dress the salad and enjoy! This is such a hearty salad!
