Spinach & Red Sauce Dish (no pasta)

One of my favorite comfort meals is pasta and red sauce! But, I learned that pasta is absolutely amazing in so many ways but I’ve found a way to get that same satisfaction with less or no starchy carbohydrate content! There are many ways to do this but in this instance I’ll share the quickest way I’ve discovered! This recipe includes using spinach. If you don’t like spinach I would look up options for using spaghetti squash! Sooooo good:). But, they do take a little longer to prep. So this is the quickest way I’ve found!

Ingredients:

-One can of Rao’s tomato sauce (I like Marinara)

-1/2 onion sliced

-3 garlic cloves chopped

-1 pack of grass-fed and local if possible ground beef.

-4 leaves of chopped fresh basil

-1/4 cup parmesan cheese to taste

- 1/4 - 1/2 teaspoon crushed red pepper (optional)

-1-2 tablespoon of cream or whole milk

-2 cups of spinach

-1 tablespoon olive oil

Instructions:

  1. Brown the meat in a pan at medium high. Pour out excess fat into a jar. Put the meat aside.

  2. Pour the olive oil into a pan and heat at medium high after it shimmers add the sliced onion. Cook until the onions are translucent then add the garlic and turn down the heat to low and cook for 30 seconds. Then add the jar of sauce. Stir.

  3. Add the crushed red pepper and half of the parmesan cheese. Rinse out the jar with the cream or milk and then pour the contents into the sauce mixture. Then stir in the basil and 1/2 cup of chopped spinach.

  4. Add the meat into the mixture and cook on low for 5-10 minutes. The longer it sits the more flavor will come forth.

  5. Wilt the remainder of the spinach in a bowl and then add 2 spoonfuls of the meat sauce onto your plate. Sprinkle with more basil, more cheese and more crushed red pepper if you like!

  6. Enjoy!
