Two Eggs Over Easy with Avocado and Arugula

This is one of my go-to healthy breakfasts. I love the healthy fat and protein combo, which keeps me feeling energized throughout the day! I hope you love it as much as I do!

Ingredients:

1 avocado, sliced

2 farm fresh eggs

1 cup arugula

salt and pepper, to taste (or another seasoning of your liking)

Instructions:

  1. Crack eggs into a non-stick or cast iron pan, and cook over easy.

  2. Place the eggs in a bowl and add the avocado and arugula.

  3. Add seasoning, and enjoy!
