Breakfast: Simple, Healthy, & Whole

Breakfast is one of my favorite meals! Personally, I don’t get too tired of the same meals repeated. But, I have been trying to create a breakfast meal that has high levels of protein and healthy fat that tastes like I’m eating granola or cereal. Sometimes, I wake up craving fruit or that sweet granola crunch. But, the amount of sugar in most granola is astounding. So, I have created a healthy option I hope you will enjoy! Please note that it is hard to get enough protein for a good meal by nuts and yogurt so you may want to eat some hard boiled eggs, a protein shake or remember to add more protein in other meals through the day!

Ingredients:

1 cup of full fat greek yogurt (feel free to substitute whatever type of yogurt you like just watch the sugar content). I always use plain greek yogurt.

3 local or organic strawberries sliced (it’s ok if you don’t have this just use whatever you can find).

2 tablespoons of Coconut Flakes

2 tablespoons of unsalted chopped walnuts or pecans

Instructions:

Step 1: Measure out 1 cup of yogurt and place it into a bowl.

Step 2: Add the Sliced nuts, strawberries, and coconut flakes in rows.

Step 3: Enjoy!!!!

*If desired you can add sweetness by adding some monk fruit, local honey, or a little vanilla yogurt.
