Incredibly Healthy Chicken & Sweet Potato Soup
Hearty Chicken Soup Ingredients:
-2 tablespoons of Avocado oil
-4 cups of homemade bone broth
-4cups of chicken broth
-1 onion diced
-6 carrots chopped
-3 ribs of celery chopped
-1 tsp dried thyme
-1/4 cup parsley chopped
-2 chopped sweet potatoes
-1/2 cup shaved parmesan
-1 lb of boneless chicken breasts, thighs or left over chicken
-salt
-pepper
Instructions:
Step 1: In a dutch oven or large sauce pan heat the oil on medium heat. Add the onions and then cook for 3 minutes. Then add the celery, carrots, sweet potato thyme salt and pepper, and cook for another 3-5 minutes while stirring.
Step 2: Add the chopped chicken. Cook for another 2-3 minutes. Pour in the chicken broth and bone broth and broth then bring to a boil. Then turn down the heat to low.
Step 3: Stir occasionally and add more salt and pepper as needed.
Step 4: Serve with shaved parmesan and fresh chopped parsley!
