Salad with Avocado & Rice Pilaf

This meal is literally one of the tastiest go to meals I can imagine:). Typically I would add chicken or steak to this as well! It works perfectly with pieces of a cooked chicken or seared steak. Pick your favorite! This recipe will focus on the salad and the rice aspect. It is a comfort health food for me! Of course as always the rice is optional! But remember this is special Armenian rice! Zero calories:)!

Ingredients:

1 ripe avocado cubbed

1 cup of chopped spinach

5 cherry tomatoes halved

1/2 of cucumber chopped

1/4 cup of crumbled feta

The Dressing

1 packet of good seasons dressing

olive oil

balsamic vinegar

red wine vinegar

Rice Pilaf

1/2 cup of uncle ben’s rice

1/4 stick of butter (grass fed)

one handful of egg noodles

1 and 1/4 cup of chicken broth

Instructions:

  1. In a small saucepan melt the butter on a high heat. Add the egg noodles until it covers the bottom of the pan. Stir them around until they are browned (not burned!). Then add the rice and stir. Pour in the chicken broth and bring the contents to a boil. Turn off the heat and cover the pan. Let it sit for 20 minutes.

  2. In a large bowl combine the spinach, tomatoes, cucumber, avocado, and feta.

  3. In a mason jar combine 1/4 cup of red wine vinegar, 1/4 cup of balsamic vinegar, one packet of good seasons and 1/2 cup of olive oil. Screw on the lid and shake! For more tang, more vinegar, for less reduce or add more oil.

  4. Scoop out a spoonful of rice into a bowl and then add salad and the dressing! Enjoy!
