Stewed Summer Veggies
Who doesn’t love fresh summer food?! Where I live in Maryland we have the privilege of being around lots of amazing farmers markets and local farms. I am specifically blessed because my parents are amazing and have a great summer garden! They do a beautiful job maintaining it. My mom gave me the idea for this recipe and added a little of my own flare! If you love stewed veggies you will love this! I feel the key is also adding some fresh parmesan cheese! Also, if you want to add a protein I love adding mussels to this dish! You can add a flakey fish or honestly anything will do if you are looking for a protein. Personally I think a slice of homemade bread will go amazing with this !
Ingredients (This can include any veggies that are out of control in your garden or half price at a farmers market)!!!!
Tomatoes
Squash, Zucchini
Eggplant
Red pepper if you like!
Garlic
Onion
Olive or Avocado oil
Sea Salt
Fresh Parmesan
Instructions:
Wash all your veggies and chop them up however you like! I like to rough chop mine:)
Peel the garlic and rough chop
Place enough oil to barely coat the pan and turn the heat to medium high. Add the garlic and onion and stir for 30-60 seconds.
Add all of your veggies. Stir consistently for 5 minutes. Place the lid on so it is half on the pan. Turn the heat to medium but it should still be pretty hot.
Add salt, then stir consistently for up to 10 more minutes. Turn down the heat to low and let it sit for another 5 minutes.
Add parmesan cheese and stir. Let it sit at low. Everyone is different but I like mine to be pretty cooked down. Let it cool!
Add more cheese if you like and enjoy with bread or anything you would enjoy!
